Anything by Mogwai.
But 'Kids Will Be Skeletons', 'Whitenoise' and 'Secret Pint' are my favourites. Other Mogwai songs have vocals, but very few and they're often distorted beyond belief via vocoders and delays.

Sigur Ros is also a good shout. The '()' album is great. Unfortunately none of the songs have titles, so #4 and #6 are my favourites.

I assumed you're talking about modern bands that make a point of being instrumental because otherwise I could name a hundred classical and jazz numbers!

edit: Oh, and "Apache".

Yeah I like a bit of classical but not really what I intended.

I've never got my head around Jazz though.

a couple of bands that come to mind, with suitable youtube links:
explosions in the sky
cinematic orchestra (some tracks have vox, not all)
bonobo (similar situation as above)
rodrigo y gabriela
portico quartet

Edit: and a jazz track by Mingus for good measure :) one of my favourite songs, and the most upbeat of all the links.

I always loved Simple Minds 'Someone up there likes you' from the 1982 album New Gold Dream.
Also theme for great cities From earlier minds (belting bass)

My fav is 'Jean walks through fresh fields' by China Crisis from memory it's on the Difficult Shapes album.

You can't beat a brassy synth and a bass.
