My AV '62 RI P-bass is wearing GHS Precision Flats 55-105, fitted/changed from the Fender rounds when new. Any changes to truss rod were minimal from factory settings & I don't remember having to change it since, for about 3 or 4 years. IMHO - if you want to change strings at all - you're going to have to gain confidence in setting up, it'll pay huge benefits in the long run, getting the action & playability exactly how it suits you - without the bills! If you have a standard Jazz, how about a custom scratch plate with no middle pick up cut-out, maybe a 1 piece incorporating the control plate with just the one hole for volume & one for Jack socket?

You need to connect the paint - I presume you mean conductive paint - to the earth coming in from the jack socket, which should also be wired to the pot bodies. Usually a screw is fitted anywhere convenient in the control cavity, with a solder tag making good contact with the paint & the wire soldered from there to the earths mentioned above^ wherever is easy.
