I use a Lumic TZ-7. It has surprisingly good sound.

Pretty much all of these were shot with it. (the Pharaoh Overlord video is where I found the limit of the cameras mics. I was about 30" from the bass cabs of a loud PA)

If you already have the audio recording gear, look for a nice HD video camera & don't worry too much about the audio quality of it because you won't be using it.

I use my iPhone or iPad for all my videos, record into logic or protools then put it all together in iMovie.

+1 for JakeBrownBass's suggestions! With an iPhone 4 you can record up to 720p HD and with the new iPhone 4S you can record up to 1080p HD - Great stuff considering they're only phones and optimum video quality for hosting on YouTube or Vimeo. Logic or Pro Tools are great for tweaking your audio and then you could use something like iMovie as JakeBrownBass suggested or Final Cut to edit both parts together.
