As far as I am aware they're just normal cables with special ends on them to help those who either can't solder or don't want to. I fall into both camps, I can do it if I need to but I don't really like to.

 

My bass has a battery box so I had to solder the wires from it to the quick connect cables to power it. In fact the kit usually comes with heatshrink tubing so that you can solder wires together

 

You'll be fine if you're happy to solder

A normal toggle is just fine. You can cut the quick connect wires and solder as normal. Before the quick connects, EMGs had a standard braided wire fixed into the pickup. The only difference is you have the additional red cable which you need to connect to your battery to power the preamp in the pickup.
