Stereo lead, mono jack?

Simple question (I hope) I have a short Curley stereo lead which I want to wire up with neutrik mono jacks to go from my wireless body pack to my guitar, can I just tape up the extra cable and then wire it as normal?

You can do that, or make use of it and solder it to the other signal conductor. - in fact, if you can get in to the stereo jack , just solder the Shield and the Ring together with a blob of solder at both ends and you won't even need to buy Mono jacks.

So I could just solder both conductors to the same terminal in the jack rather than taping it up?

Yup! Solder both conductors to the Tip. For extra measures solder the Ring to the Shield.
