Could I send out a monitor mix from my mixer using the control room connection?

When you say “monitor mix” do you want to create a separate mix for monitoring, different from the main mix? 
 

If so you can do that as long as you don’t mind your main mix being in mono.

You just use left and right outputs as separate feeds - one for the PA (left), one for monitors (right). The Pan control on each channel acts to control how much of each signal goes to left and right - so a channel panned centre goes to both PA and Monitors, panned full left PA only, panned full right Monitors only...
