+1 for JakeBrownBass's suggestions! With an iPhone 4 you can record up to 720p HD and with the new iPhone 4S you can record up to 1080p HD - Great stuff considering they're only phones and optimum video quality for hosting on YouTube or Vimeo. Logic or Pro Tools are great for tweaking your audio and then you could use something like iMovie as JakeBrownBass suggested or Final Cut to edit both parts together.
