Advice sought: stripping a poly body, then oil finish

I've got this Jazz body from a 2019 Fender American Pro that I'd like to take down to the bare wood then give the body an oil finish. It's a sunburst so I'm pretty confident that the wood will be presentable (though I'm not that fussed).

Would Nitromors be suitable for stripping the current finish? If not, what would you suggest?

Once it has been stripped, I'd like to give it an oil finish (when I played guitar I fell in love with the Washburn N4 and, in large part, that was down to the finish of the body). What oil would be good for this? I'm sure that successive coats will cause a certain amount of colouration over time, but I'm not looking to stain it, if you get my meaning.

Any gotchas I should look out for as I do this?
