Most of that whole album (American Recordings IV) improve on the originals I think. Cash lends gravity and power to songs like Desperado, Bridge Over Troubled Water, We'll Meet Again etc, songs which I'd never liked before. A fantastic album.

Our band do a mix of the Lizzy and Metallica versions of Whiskey in the jar.

Can't agree with the Grapevine cover, bloody awful.

Bit of an odd one - for me as my thing's typically prog & metal, and also as it's an acoustic cover by an act who aren't "serious" musicians. Australian comedy trio The Doug Anthony Allstars' cover of Hunters & Collectors "Throw Your Arms Around Me".

That's probably because no one wants to sound like Dylan.

Listening to Jimi Hendrix's live version of Like a Rolling Stone is a semi religious experience for me.
Metallica's version of Bob Segar's Turn the Page is awesome.
The complete back catalog of Me First and The Gimme Gimmes is also worth a listen.

The Hamsters were a local SE Essex band - tight RnB, their own stuff is pretty good as well as the Hendrix and ZZ Top covers they do - lost count f how many times I've seen them. Sadly they packed up a couple of years ago.
